The only why i know, is that you record the demo when you are in spectate.
So you must run a second Teeworlds, go in Spectate and record.
Then you go to the other Teeworlds and play.
And when you look the demo, you have a freelook like in spectate.
No, it's not possible since the client only see's whats on the screen, it does not receive data about what's happening off screen. The "spectate" way will not work.

Then i missunderstand him O.o
I have got some demos where you can spectate.
I think you have to find it out by yourself. It works, and I don't know how.

It is possible to spectate on server-side demos, but their recording is bugged and thus should be used with care (any join or leave during the recording will corrupt the demo).
i've found that, if you record the demo from the rcon the demo will be as spectate (i think because the "rcon user" is not IN the game or something like that), so if it's your seerver, you can do it running record from rcon...
thats what magnet told... server sided demo recording
i tryed this some time ago... the demo was 20MB after 3min oO and as i tryed to watch the client crashed after joining or leaving from a player but it was possible to skip ^^
